Summer Snacking Made Easy

One of my kids is a grazer. He’s on a growth spurt right now and wants to snack all day long. After finding empty popcorn and Pirate’s Booty bags around the house yesterday, I decided to take some action to ensure better, healthier snacking this summer.

I noticed that if I buy the organic pre-cut apples, my kids will grab those when they are hungry first. I usually avoid the pre-packaged foods because of the waste, but at Costco yesterday these were the only organic apples they had, so I broke down and bought them. Immediately after getting home, both kids grabbed one and started snacking. That’s when I had an idea.

This morning, I spent 15 minutes washing fruit and vegetables – in a one part vinegar to ten parts water solution to prohibit mold growth and prolong shelf life of fruit and veggies. The vinegar evaporates and leaves no taste on your produce so don’t worry.  Then, I divided everything into individual servings and loaded up the fruit and veggie drawer. Making fruit and veggies as easy as grabbing a bag of chips.

Here’s hoping for healthier snacking this summer.

Wordless Wednesday: Holiday Card Display

Every year I struggle with what to do with the holiday cards. Everyone has such great photos and I love seeing all the families grow. I want to display them all, but it always takes up so much room. Here is my solution for this year:

Holiday Card Display

I totally made this up! I didn’t even find it on Pinterest, which is pretty amazing.

The best thing is that I didn’t buy anything. I had this wreath and nowhere to put it.  Then, I wanted to use twine to tie the cards. But I didn’t have twine (I used it all to string up tomato plants that died because I kinda suck at growing things).

So I only had this leftover yarn from some school project. I think it was used as hair for our “famous dead person” report last year. Yeah, we had to make a puppet of a dead person – so anyway… I had this wreath I didn’t know what to do with and leftover string from dead-person hair, and I made this.

And I kind of love it.

Of course, our card is not there because, although I do pride myself on holiday decorating, holiday card preparation and mailing – not really my specialty.

So there you go. One more idea for how to display your holiday cards. Now I can “pin it”. Nice!

Wordless Wednesday: Gratitude

There is a hike I do regularly in an OC wilderness park called Whiting Ranch. At the top of the climb, there is a place called four corners. I always stop there and take in the view.

And then I say a little prayer of gratitude, for the day, the weather, the place where I live and most of all, legs strong enough to make the climb and enjoy this view.

Two legs to take me up here (no matter how thin, thick, muscled, wrinkled or tan) is a thing I normally take for granted, but every once in a while, I think it’s important to just stop and appreciate them. And be grateful.

Wordless Wednesday: Bring on Fall

I was in a Fall kind of mood yesterday, so I got to decorating the house and baking pumpkin bread.

The fact that is was 85 degrees outside did not deter me.

I’m going with the “if you build it they will come” theory on Fall weather. Just looked at the forecast for the rest of the week. It’s not working out so well.

The other day on the Ferris Wheel at the Irvine Spectrum I spied…solar panels on the top of Macy’s.

They made me smile. And think I should probably shop at Macy’s more often.

Wordless Wednesday: Photo of the Summer

Yay, my first “Wordless Wednesday” post. For future posts, I intend to share photos of all the beautiful, natural, green things I find in and around the OC. There’s lots of material there.

In honor of the last day of summer for our family, our photo of the summer:

For the most part, these posts will be wordless, but here is a short story of how this photo came to be – We were enjoying the last week of summer vacation down at Victoria Beach in Laguna. My daughter and I walked down to the beach to watch my son and husband paddle in on their paddleboards. While waiting, my daughter (who dances EVERYWHERE she goes), started dancing on the beach.

She was just dancing for the pure love of it – without a care in the world. I quickly broke out the iPhone and started snapping photos.

Many of them didn’t turn out, but then there was this one. I added the caption “Dance like no one’s watching” on Instagram because that is exactly what she was doing – just dancing for the joy of dance, the joy of the ocean, the joy of a beautiful sunset, the joy of summer. The photo above is the #nofilter version.

We will miss you, summer 2012, thank you for bringing us moments of beauty like this.
